Tea leaf selection
The highest grades of white tea, yellow tea and green tea are made from tender tea shoots picked early Spring. These young teashoots may consist of a single terminal bud, a bud with an adjacent leaf or abud with two adjacent slightly unfurled leaves. It is generally required thatthe leaves are equal in length or shorter than the buds.
The more oxidised teasuch as red tea or oolong tea are made from more mature leaves. The Anxi Tieguanyin, for example, is made from one bud with two to four leaves.
Not all high grade greentea is made from tender tea shoots. The highly regarded green tea Liu An Gua Pian is made from more matured leaves.
Traditionally thesetender tea shoots are picked before 5 April, or Qing Ming Jie. The standard practice is to start picking when 5% of the garden isready, or when the tea buds reach certain size. In some tea gardens, tea shootsare picked daily, or every 2 days.
West Lake Dragon Well
This tea originated in Dragon Well Village near the city of Hangzhou in Zhejiang Province of China. It has more than a thousand years of recorded history and was mentioned in the first ever tea book (Cha Ching) by Lu Yu in the Tang Dynasty. As China's most famous green tea, Dragon Well can be found in Chinese mythology and poetry.
The tea is often called the national drink of China and often given to heads of state and there are a few plantations which produce tea exclusively for the heads of the Chinese Government. It is very famous not only for its unique gentle and sweet flavor, but also for the legend about it. Dragon Well tea is so popular that even Queen Elizabeth II, former US President Richard Nixon, and Henry Kissinger once tasted this tea during their visits to China.

Taiping Monkey King
Taiping Monkey King Tea is grown at the foot of Huangshan Mountain in Taiping County, Anhui Province. It is renowned for its "two knives and one pole": two straight leaves clasping the enormous bud with white hairs. The oven-made leaves are deep green in color with red veins underneath.
